Ingredients for 2 servings:

  • 1 avocado(s)
  • 1 small onion(s)
  • 250 ml vegetable stock
  • 100 ml milk
  • 50 ml cream or Cremefine
  • lemon juice
  • salt and pepper
  • n. B. herbs

Halve the avocado lengthwise, remove the pit, and scoop out the flesh. Chop the onion into small pieces. Place the avocado and onion in a saucepan, add a few squeezes of lemon juice, and purée everything until smooth, either with an immersion blender or mash it fairly finely with a potato masher (if you like chunks in your soup, the latter is better). Then add the vegetable stock, milk, and cream, mix well, and bring everything to a boil. Season well with salt and pepper and add herbs (e.g., parsley) if desired.
