Ingredients for 1 servings:
- 1 packet of yeast (dry yeast)
- 60 ml milk, 1.5% fat, lukewarm
- 340 g flour (wholemeal flour)
- 4 tsp sweetener, liquid
- 1 pinch of salt
- 4 drops of bitter almond flavor
- ½ tsp gingerbread spice
- 1 egg(s)
- 70 g butter (semi-skimmed butter)
- 100 g quark (low-fat quark)
- 100 g fruit (dried soft apricots)
- 30 g raisins
- 1 ½ tbsp water, hot
- 5 drops of flavoring (butter flavoring)
- ½ bottle of rum flavoring
Instructions
Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes
Dissolve the yeast in lukewarm milk and mix with the other dough ingredients to form a smooth dough. Let it rise in a warm place for about 60 minutes. Finely dice the apricots and roughly chop the raisins. Pour the rum and butter flavoring and hot water over both and let it sit. Knead the fruit mixture into the dough, shape into one or two Stollen, and let it rise for another 40 minutes. Preheat the oven to 170°C (fan oven) and bake the Stollen for about 50-60 minutes. (For two Stollen, about 40 minutes.)
