- 200 g oat flakes, ideally freshly flaked
- 90 g wholemeal spelt flour or emmer flour, ideally freshly ground
- 125 g natural yogurt
- 80 g agave syrup
- ½ pack of baking powder (approx. 1 teaspoon)
- 30 g plum jam or other jam of your choice

A not too sweet snack for in between meals, super easy to make, quick, filling
Squeeze the orange and use about 50 ml of juice for the recipe. Then put all the ingredients together in a mixing bowl and mix well. Line a baking tray with baking paper and then place small mounds on top using a teaspoon. Caution: The dough will spread a little, so leave some space between the mounds. Place some plum jam or jam of your choice in the center of each mound and press it down lightly to form discs. Bake the cookies in a preheated oven at 180°C (top/bottom heat) for about 15 minutes. Let the cookies cool slightly before removing them from the baking paper. This amount of dough makes about 30 cookies, which I fit on one baking tray. Without the jam/jam filling, one cookie has just under 50 kcal. I usually use homemade plum jam with birch sugar. The cookies taste delicious and are very filling. Tips: Mix the remaining orange juice with plenty of mineral water to create a thin, delicious fruit spritzer. If you have time, let the mixed dough stand for about 1 to 2 hours so the moisture is absorbed into the oatmeal and flour. However, you can also bake the cookies right away if you’re in a hurry.
