Delicious vegan muesli cookies

Ingredients for 1 servings:

  • 100 g oat flakes, fine
  • 2 small apples, e.g. Braeburn
  • 4 dates
  • 15 g chia seeds
  • 1 handful of walnuts

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

First, peel both apples, remove the cores, and cut them into pieces. Purée the apple pieces with a hand blender. Next, finely chop a handful of walnuts. Pit the dates and cut them into small pieces. They provide the necessary sweetness and can replace granulated sugar or honey. Preheat the oven to 180°C (top/bottom heat). Place the oats, chia seeds, chopped almonds, dates, and applesauce in a mixing bowl and mix everything with your hands until a moist dough forms. Form the dough into small balls, place them on a baking sheet lined with baking paper, and flatten them. Bake the cookies in the hot oven for about 10-15 minutes, until the edges are golden brown. Let them cool completely and enjoy. This dough yields about 15 to 20 cookies. Notes: I prefer Braeburn, but any variety will work. If you don’t have any apples at home, you can also mash two ripe bananas. Or you can use fruit puree without granulated sugar from a jar. Hazelnuts, almonds, or other nuts work instead of almonds. Of course, you can use more or fewer dates, depending on how sweet you like it. Since the cookies are sugar-free, they’re also great for children and can even be used as a little treat for dogs.
