Oberallgäu apple pancake

Ingredients for 4 servings:

  • 2 apples
  • 4 eggs, separated
  • 8 tbsp sugar
  • 120 g flour
  • 200 ml milk
  • 2 tbsp butter
  • 4 tbsp hazelnuts, chopped
  • some powdered sugar
  • 1 pinch of salt

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Peel, core, and slice the apples. Whisk the egg whites and a pinch of salt in a tall bowl until stiff peaks form. Add 2 tablespoons of sugar while whisking, and continue beating for 1 minute. Whisk together the flour, remaining sugar, egg yolks, and half of the milk until smooth. Gradually add the remaining milk. Carefully fold in the beaten egg whites. Finally, melt the butter in an ovenproof pan in a preheated oven at 210°C (top/bottom heat) or 190°C (fan oven). Pour in the batter, scatter the apples and hazelnuts on top. Bake on the middle rack for about 25 minutes. It’s best to cut the Schmarrn into pieces with a spatula or wooden spoon and dust with powdered sugar. Approx. 520 kcal per serving.
