Ingredients for 1 servings:

  • 3 eggs
  • 500 g zucchini
  • some salt and pepper
  • Paprika powder
  • Fat for the mold

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 55 minutes

simple, low-carb

Grate the zucchini. Add the eggs and seasonings. Mix everything well and fill well-greased muffin tins or silicone molds. Bake at 180 degrees Celsius (350 degrees Fahrenheit) for 45 minutes. I like to serve these muffins as a side dish with lean chicken breast fillets and avocado.
