Ingredients for 4 servings:

  • 1 pumpkin(s) (Hokkaido)
  • 1 tbsp oil
  • 2 tbsp soy sauce
  • some tomato ketchup
  • 1 tsp curry powder
  • 1 tsp paprika powder, sweet or hot
  • some ginger powder
  • pepper
  • Salt
  • possibly chili powder

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Wash the Hokkaido pumpkin, cut it in half, and roast it skin-side down on a baking sheet lined with baking paper at 150°C fan-assisted oven for about half an hour, until the edges are browned and it’s soft enough to handle. Then remove the seeds and green top and cut it into 1 cm wide pieces. Mix the remaining ingredients into a marinade and spread it over the pieces. Bake the pumpkin in the oven at 180-200°C for another 15-20 minutes, until it’s a nice brown.
