Pear pancakes

Ingredients for 4 servings:

  • 4 eggs (class M)
  • 75 g sugar
  • Salt
  • 100 g flour
  • 10 g butter
  • 200 g pear(s), halves, from the can
  • 2 tbsp raisins
  • powdered sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Preheat the oven to 200°C (gas mark 3, fan oven 180°C). Separate the eggs. Beat the egg whites with sugar and a pinch of salt using a hand mixer until stiff peaks form. Stir in the flour and egg yolks until smooth. Grease a non-stick frying pan with butter and heat. Cut the drained pears into wedges and spread them on the bottom of the pan with the raisins. Pour the mixture over the top. Wrap the pan handle in aluminum foil and bake the pear pancake in the hot oven on the second rack from the bottom for 15-20 minutes, until the top is browned. Remove from the oven. Flip the pancake onto a large plate and slide it back into the pan. Dust with powdered sugar to serve. Serve with vanilla sauce or ice cream.
