Apricot dumplings

Ingredients for 1 servings:

  • 160 g butter
  • 20 g sugar
  • 15 g vanilla sugar
  • 1 pinch of salt
  • 1 egg(s)
  • 1 egg yolk
  • 300 g quark (10%)
  • 100 g flour
  • 10 apricots
  • 5 sugar cubes
  • 100 g breadcrumbs
  • 1 pinch(s) of vanilla sugar

Cream the butter with sugar, vanilla sugar, and salt until fluffy. Add the egg and egg yolk. Mix in the quark and flour. Then chill the dough. Wash and dry the apricots. Cut them open and remove the stones. Halve the sugar cube and add it to the apricot for the stone. Shape the quark dough into a roughly 6cm thick roll, cut into 10 slices, and roll into dumplings. Place an apricot into each dumpling and cover them well with the dough. Place the dumplings in lightly salted, boiling water. After boiling, let stand for 10 minutes. Turn halfway through cooking. They are done when they float to the surface. For the toasted breadcrumbs, melt the butter. Add the sugar, a pinch of vanilla sugar, and the breadcrumbs; toast. Roll the finished dumplings in the water and serve immediately.
