  • 125 g quark
  • 125 g flour
  • 2 eggs (1-2)
  • 60 g butter
  • Salt
  • Breadcrumbs and butter
  • Sugar
  • sugar cubes
  • 16 apricots, approx.

Press the curd cheese through a kitchen towel and pass it through a fine sieve. Sift the flour. Heat the butter and mix it with the curd cheese, flour, eggs, and salt to form a smooth dough. Pit the apricots, cover each one completely with the dough, and press down firmly. Add to boiling water, let it boil once, and immediately reduce the heat. Let the dumplings stand for about 10 minutes. Toast the breadcrumbs in butter and roll the dumplings in it, one at a time. Serve with powdered sugar. Tip: If the apricots are very sour, you can add a small sugar cube instead of the stone. This dough is also suitable for any type of fruit dumpling, which can also be served with ground, roasted nuts and powdered sugar.
