Ingredients for 8 servings:
- 1 kg bread(s) (brown bread), crust removed
- 250 g fat
- 250 g onion(s), finely chopped
- 250 g cheese (Appenzeller), diced
- 50 g chives, finely chopped
- 5 liters of broth
- 10 g caraway seeds
- salt and pepper
- nutmeg
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Cut the bread into even-sized cubes, toast in the fat, and keep warm. Heat the fat in a saucepan, sauté the onions and caraway seeds, add the stock, and add the chives. Simmer the stock for about 5 minutes. Just before serving, add the bread and cheese cubes and season to taste.
