Sorrel soup

Ingredients for 4 servings:

  • 100 g sorrel
  • 100 g lettuce (or spinach)
  • 50 g parsley
  • 50 g butter
  • 100 g potatoes
  • 500 ml chicken broth
  • salt and pepper
  • 4 tbsp cream

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Wash and roughly chop the sorrel leaves, lettuce (spinach), and parsley. Heat butter in a saucepan and sauté the chopped leaves. After 5 minutes, add the diced potatoes, stir well, and pour in the broth. Season with salt and pepper. Cook for 25 minutes. Strain through a coarse sieve and return to the heat. Stir in the cream.
