Ingredients for 4 servings:
- 2 zucchini, yellow and green
- 6 tbsp olive oil
- 150 g smoked tofu
- Thyme, fresh
- 5 tbsp balsamic vinegar
- 1 tsp peanuts, unsalted, or cashews
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Trim the ends of the zucchini and slice with a vegetable peeler. Spread out and lightly salt. Pat the tofu dry and cut into 5 cm long and 1 cm thick slices, then fry briefly in oil. Top the tofu with thyme and wrap it in the zucchini slices, secure with toothpicks, and fry in oil. Season with salt and pepper and sprinkle with grated nuts and a little thyme. Drizzle with balsamic vinegar and serve.
