Ingredients for 3 servings:
- 6 pieces of cheese, goat cheese coins
- 250 g arugula
- 6 tomatoes
- 2 onions
- 8 tbsp olive oil
- 4 tbsp balsamic vinegar
- Thyme, fresh
- Herb salt, freshly ground pepper
- 2 cloves garlic
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Finely chop the onions. Heat olive oil in a pan, add the chopped onions and the crushed garlic cloves, and fry until browned. Add the goat cheese slices (the uncured ones, available at well-stocked cheese counters, are fresh goat cheese) to the pan and fry briefly on both sides over high heat (careful, they will become soft, so you have to do this quickly). Add pepper, salt, and a few chopped sprigs of fresh thyme just before the end. At the very end, drizzle with balsamic vinegar. Wash the arugula and cut into bite-sized pieces, discarding any tough stems. Arrange the arugula on a serving platter. Slice the tomatoes and arrange them on top of the arugula. Top with the fried goat cheese slices. Drizzle the oil and vinaigrette from the pan over the whole thing and serve while still warm. Serve with baguette, ciabatta, pide, or French country white bread.
