Ingredients for 4 servings:

  • 150g bacon
  • 2 eggs
  • 200 g flour
  • 1 pinch of salt
  • 1 tsp baking powder
  • 200 ml milk
  • 3 tbsp clarified butter
  • 1 lettuce
  • 1 garlic clove(s)
  • 150 g natural yogurt
  • some vinegar
  • oil
  • Sugar
  • salt and pepper
  • chives for garnishing

Working time approx. 15 minutes; Total time approx. 15 minutes

Children’s meals

Cut the bacon into small pieces and fry in a pan until crispy. Whisk the eggs, salt, milk, flour, and baking powder together, using a hand mixer if necessary, until smooth. Fold in the bacon. Preheat the oven to 60°C (to keep the coins warm). Heat a little clarified butter in the same pan you’ve already used and fry 1 tablespoon of batter per coin, one at a time, until golden brown. The baking powder will help the coins rise nicely. Keep warm. Wash and trim the lettuce and make a dressing from vinegar, oil, salt, pepper, and sugar. Mix the yogurt with the crushed garlic and a little salt. Serve the salad, bacon coins, and a dollop of yogurt on the plates, and sprinkle with chives if desired.
