Ingredients for 4 servings:
- 500g tofu
- 2 egg yolks
- 100 g cheese (Gruyzer or any semi-hard cheese), grated
- 50 g Parmesan, grated
- 80 g Flour, double-grip, type 550
- 1 tsp mustard, sweet
- Chervil, shredded or better fresh, finely chopped
- Curry, Ceylon mix
- 1 tsp paprika powder, hot
- Salt (Fleur de sel)
- Breadcrumbs or cornflakes for coating
- 1 egg(s)
- Oil for frying
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Crumble the tofu and mix it with the egg yolks. Add both cheeses, mix well, and season with the spices. Add enough flour to form balls. Coat in beaten egg and breadcrumbs and deep-fry at approximately 160°C.
