Ingredients for 2 servings:

  • 250g spaghetti
  • 250 g creamed spinach, frozen
  • 125 g cashew nuts
  • 100 g cherry tomatoes
  • 1 onion(s)
  • e.g. cream
  • Oil or butter
  • salt and pepper

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Bring the pasta water to a boil and cook the spaghetti according to the package instructions. Meanwhile, chop the onion and fry it in oil or butter. Halve the cashews, if desired, and toast them. Then add the still-frozen spinach and let it thaw slowly. Wash and halve the cherry tomatoes, add them, and let it simmer until reduced to your liking. Season with cream, salt, and pepper. Add the pasta to the spinach sauce and let it sit on the stove for a short while, so the sauce and pasta combine.
