Spelt and quark waffles

Ingredients for 1 servings:

  • 1 tbsp margarine (e.g. yellow Becel)
  • 3 eggs
  • 200 g quark
  • 75 g raw cane sugar or baking sweetener
  • 2 tsp, leveled baking powder
  • 200 g spelt flour, alternatively rye flour
  • 1 shot of mineral water
  • 1 packet of vanilla sugar
  • Margarine (e.g. yellow Becel), for greasing

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Whisk the margarine, quark, and eggs together on high using an electric hand mixer. In a separate bowl, combine the flour, baking powder, sugar, and vanilla sugar. Now add the flour mixture, a tablespoon at a time, to the egg and quark mixture along with a generous splash of mineral water, whisking together on high using an electric hand mixer. The mixture should not be runny, but should pull away from the tablespoon. Brush a waffle iron with a little margarine. A maximum of 2 tablespoons of batter per waffle is sufficient. Bake the waffle and serve with a little powdered sugar or maple syrup.
