Mandarin cheesecake without a base

Ingredients for 1 servings:

  • 500 g quark (low-fat quark)
  • 300 g yogurt (0.1%)
  • 200 g cream cheese (0.2%, e.g. fitline Philadelphia)
  • 100 g semolina
  • 1 packet of pudding powder (vanilla)
  • 1 tsp vanilla sugar
  • 4 eggs
  • 70 g sugar
  • 200 g mandarin orange(s) (can), drained
  • 1 lemon(s), juice and grated peel
  • Fat for the mold

Separate the eggs and beat the egg whites with a pinch of salt until stiff peaks form. Combine the remaining ingredients in a bowl and mix well, then carefully mix in the mandarin oranges. Finally, fold in the beaten egg whites. Pour the batter into a greased 26cm springform pan. Bake in a preheated oven at 160°C for approximately 35-40 minutes. Let cool in the oven to prevent it from collapsing. Variation without mandarin oranges: Omit the mandarin oranges and add an additional 100g of sugar. Note: If you prefer the cake sweeter, you can use more sugar.
