Ingredients for 4 servings:

  • 1 kg spinach, fresh
  • 6 tbsp olive oil
  • 1 garlic clove(s)
  • 2 tsp pine nuts
  • 150g mozzarella
  • 6 tbsp Parmesan, grated
  • Salt and pepper, black

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Clean the spinach, trimming the stems. Preheat the oven to 225°C. Brush the roasting pan with 3 tablespoons of oil, peel and halve the garlic clove, and rub it into the roasting pan. Spread the spinach on top and press down lightly. Drizzle with the remaining oil and sprinkle with the pine nuts. Dice the mozzarella and spread it over the spinach. Season with salt and pepper, and sprinkle with Parmesan cheese. Bake in the oven for 15-20 minutes.
