Baked eggplants

Ingredients for 4 servings:

  • 2 eggplant(s)
  • e.g. tomato paste
  • some salt and pepper
  • some garlic granules
  • some oil
  • n. E. Herbs of Provence or similar

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 25 minutes

very simple and tastes a bit like pizza

Cut the eggplants into even slices and arrange them on a baking sheet. Sprinkle with salt, then spread tomato paste over the slices. Then sprinkle the remaining seasonings over the eggplants and top with the cheese. Bake in the oven at 180°C for approximately 15-20 minutes. Serve as a snack, a side dish with rice, or as a main course.
