Apple and curd cake

Ingredients for 1 servings:

  • 250 g flour
  • 125 g sugar
  • 1 packet of vanilla sugar
  • 125 g butter or margarine
  • Fat, for the shape
  • 350 ml applesauce
  • 150 g butter or margarine
  • 125 g sugar
  • 1 packet of vanilla sugar
  • 1 tbsp lemon juice
  • 2 eggs
  • 500 g low-fat curd cheese
  • 1 packet of vanilla pudding powder
  • 1 tbsp powdered sugar

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 10 minutes

Dough: Mix all but 2 tablespoons of flour, sugar, and vanilla sugar. Melt the fat and pour over the cake. Using the dough hook on a hand mixer, mix into crumbles. Sprinkle the crumbles with the remaining flour and shake in a bowl. Grease a 26 cm springform pan and press two-thirds of the dough firmly into the base. Spread the applesauce on the bottom. Filling: Place the fat in a bowl and beat until fluffy. Add the sugar, vanilla sugar, and lemon juice and mix in. Add the eggs one at a time and beat the mixture until creamy. Stir in the quark and pudding powder. Spread the vanilla-quark mixture over the applesauce and sprinkle the remaining crumble mixture over the edge. Bake the cake in a preheated oven (gas mark 3, electric oven: top/bottom heat 200°C) for 45-50 minutes. Let the apple-quark cake cool slightly and remove it from the pan. Once cooled, dust with powdered sugar. Serve with whipped cream, if desired.
