Ingredients for 2 servings:
- 1 garlic clove(s)
- 1 onion(s)
- 1 red bell pepper(s)
- 1 beefsteak tomato(s)
- 2 tbsp oil
- 125 g rice (long grain rice)
- 300 ml chicken stock
- 2 tbsp parsley, flat, chopped
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Finely slice the garlic clove. Finely dice the onion. Deseed and finely dice the bell pepper. Deseed and finely dice the beefsteak tomato. Heat the oil and sauté the garlic and onion, then add the bell pepper and tomato cubes and sauté for 1 minute. Now add the rice, stir, and pour in the broth. Bring to a boil. Cover and simmer for 20 minutes over low heat. Stir in the parsley just before serving.
