Ingredients for 2 servings:
- 100 g millet
- 1 small cucumber(s) or 1/2 cucumber
- 4 sprigs of parsley
- 2 sprigs of mint
- 2 tomatoes
- ½ lemon(s)
- 2 tbsp olive oil
- salt and pepper

Prepare the millet according to the package instructions, stirring regularly. Place the millet in a bowl, season with salt, and let cool. Meanwhile, wash the cucumber, halve, deseed, and finely dice. Wash, quarter, deseed, and dice the tomatoes. Squeeze the lemon. Wash the parsley and mint, shake dry, and then pick and finely chop only the leaves. Combine all ingredients in a bowl. Add olive oil and lemon juice, season with salt and pepper, and mix well. Tip: If you like it a little spicier, you can also season the millet salad with a little chili powder or hot paprika. The mint and lemon make this salad very refreshing, especially in summer, and the millet keeps you full for a long time.
