Vegetable Gazpacho

The perfect vegetable gazpacho recipe with a picture and simple step-by-step instructions.

  • 2 Discs Toast
  • 1 Paprika
  • 2 Big tomatoes
  • 0,25 Cucumber
  • 1 Pc. Ginger
  • 0,5 Onion
  • 1 Clove of garlic
  • 1 tsp Vegetable broth
  • 1 Lime
  • Fresh basil
  • 1 Chili
  • Salt
  • Pepper
  • Sugar
  1. Cut toast bread into cubes and place in the vegetable stock. Dice tomatoes, season with sugar and pepper.
  2. Chop the onions, paprika, cucumber and ginger and season everything with sugar, salt and pepper. Chop the basil, cut the chilli into rings. Attention: Put some basil and paprika aside for later decoration.
  3. Put the vegetables in the blender, squeeze the lime and add the juice. Finally add the pickled toast and mix everything into a homogeneous soup. Place the soup in a deep plate and decorate with the paprika pieces and the basil.
