Ingredients for 4 servings:

  • 1 head of cauliflower
  • 1 cup of natural yogurt, 3.5%
  • 3 tbsp lemon juice, or vinegar
  • ½ tsp salt
  • 1 tsp sugar
  • Herbs, e.g. dill, lemon balm, parsley, chives

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Total time approx. 50 minutes

a refreshing salad

Wash the cauliflower, briefly soaking it in salted water to remove any insects. Combine the marinade ingredients. Chop the cauliflower and coarsely grate it (this works best in a food processor). Immediately toss with the marinade and let it sit for 30 minutes. Sprinkle with herbs and serve. This marinade can be used for all raw vegetable salads, such as carrot, turnip, parsnip, beetroot, etc.
