Pea and ginger soup

Ingredients for 4 servings:

  • 2 spring onions
  • 1 garlic clove(s)
  • 1 tbsp butter
  • 400 g peas, frozen
  • 1 tsp ginger, grated
  • 600 ml chicken stock
  • 200 ml cream or low-fat cream cheese
  • salt and pepper
  • 4 tbsp crème fraîche or sour cream

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

with garlic and spring onions

Finely chop the white parts of the spring onions and the garlic and sauté in the butter. Add the peas and ginger and deglaze with the chicken stock. Simmer for 8 minutes, then puree and add the cream or cream cheese. Now slice the green parts of the spring onions into rings, add them, and simmer for another 3 minutes. Season with salt and pepper and serve with a dollop of crème fraîche.
