Ingredients for 4 servings:
- 2 onions
- 2 garlic cloves
- 1 red chili pepper(s)
- 500 g tomatoes, fresh
- 2 tbsp basil, chopped
- 1 tbsp parsley, chopped
- 3 tbsp olive oil
- 3 tbsp balsamic vinegar
- ½ can tomatoes, pureed
- 600 ml vegetable stock
- Salt
- Tabasco
- 4 tbsp crème fraîche or sour cream
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
with chili and garlic
Finely chop the onions and garlic. Deseed and dice the fresh tomatoes and chili. Briefly sauté in olive oil. Add the passata and stock. Add the basil, parsley, balsamic vinegar, salt, and Tabasco and simmer for about 20 minutes. Then puree and serve with a dollop of crème fraîche.
