Apple cake with speculatius biscuits without baking

Ingredients for 1 servings:

  • 250 g spiced speculatius
  • 100 g butter
  • Fat for the mold
  • 700 g apples
  • 500 ml apple juice
  • 2 packets of vanilla pudding powder
  • 100 g sugar
  • 1 cup of sour cream, approx. 200 g
  • 1 cup of cream, approx. 200 g
  • 1 packet of vanilla sugar

Instructions

Working time approx. 45 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 20 minutes; Total time approx. 13 hours 5 minutes

Crush the spiced speculatius biscuits, mix with the butter, and press firmly into a greased springform pan. Peel the apples, cut into eighths, and cut into small pieces. Mix the custard powder with a little apple juice. Bring the apple pieces to a boil with the remaining apple juice, the sugar, and the vanilla sugar. Let it reduce slightly, then remove from the heat and stir in the mixed custard powder. Bring to a boil once. Pour the mixture onto the speculatius biscuit base and refrigerate overnight to set. Mix the sour cream, cream, and vanilla sugar and spread over the apple mixture. Decorate with speculatius biscuit crumbs, if desired.
