Summer Cake Made from Refreshment Sticks

The perfect summer cake made from refreshment sticks recipe with a picture and simple step-by-step instructions.

Batter

  • 100 gr Butter
  • 70 gr Sugar
  • 60 g Spelled flour
  • 1 teaspoon Baking powder
  • 10 g Cocoa
  • 2 medium sized Free range eggs
  • 4 drops Orange aroma

cream

  • 2 Cans Mandarin oranges
  • 50 ml Juice from the mandarins
  • 8 leaf Gelatin
  • 500 g Cream
  • 20 g Sugar
  • 2 packet Vanilla sugar
  • 300 g Yogurt
  • 150 g Refreshment sticks

Batter

  1. Mix the butter and sugar until creamy. Gradually add the eggs and the remaining ingredients.
  2. Then you take a cake ring, or the one from a 26 cm springform pan. Put a baking paper underneath and bake on a wire rack. Please not on a baking sheet. On 170c 10-15 minutes. Depending on the oven.
  3. When the cake base is ready, you have to let it cool down well.

cream

  1. In the meantime, whip the cream very firmly. Off to the fridge.
  2. Please drain the two tangerine cans in a sieve and remove 50ml of juice beforehand.
  3. Soak gelatine.
  4. It is best to pound the refreshment sticks very small with a mortar. 6 Take them aside for decoration. Just as much mandarins. Then mix the yoghurt with 20g sugar, 2 packets of vanilla sugar and the juice from the mandarins well. Put some of it in a bowl for the gelatine.   5. Then heat the gelatin. Mix the yoghurt, taken aside, with the gelatine; this is called temperature equalization. Then distribute everything well under the yogurt mixture.
  6. Now put some of the whipped cream in a piping bag for the decoration. Carefully fold the rest of the cream into the yoghurt mixture.
  7. Put the whole thing in the fridge for 2-3 hours.
  8. Then decorate with cream, refreshment sticks and tangerines as you like, or not. The cake tastes good with and without decoration.
