Exotic sweet potato, peanut and coconut soup

Ingredients for 6 servings:

  • 1 liter meat broth, or poultry or vegetable broth
  • 3 sweet potatoes
  • 3 tomatoes
  • 250 ml coconut milk, from the can
  • 1 tbsp peanut butter
  • 1 clove(s) garlic clove(s)
  • ½ chili pepper(s), hot
  • some ginger
  • some curry paste
  • 1 dash of soy sauce
  • possibly crème fraîche
  • Parsley, chopped

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Original creation for people who would like to try something new and unusual.

Make chicken, meat, or vegetable broth beforehand (better), or use instant broth. Cut the sweet potatoes into smaller pieces. Place the tomatoes in boiling water until the skin flakes, then peel them under cold running water. Add the potatoes, tomatoes, a little ginger, chili peppers, and garlic clove to the broth and simmer for about 20 minutes. Puree with a hand blender (remove the chili pepper and garlic beforehand if necessary). Add the coconut milk and peanut butter. Add a little curry paste and soy sauce to taste. The soup should be slightly creamy; add a little water if necessary. If the soup is a bit too sweet, you can add a little crème fraîche. The soup should be slightly spicy, or spicier if you like. Garnish with parsley to serve.
