Omelette with sweet and spicy tomato sauce

Ingredients for 4 servings:

  • 4 eggs
  • some dill or herbs, mixed, e.g. frozen
  • 50 g cooked ham
  • some processed cheese, e.g. Gouda
  • 2 tomatoes
  • 2 tbsp sugar
  • some salt and pepper
  • 2 tbsp whipped cream
  • oregano

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

For the sauce, quarter the tomatoes and puree them with a hand blender. Then place them in a small saucepan and bring to a boil. Add the sugar, salt, and cream. Season with pepper to taste. Overall, the sauce should be slightly sweet yet spicy. Too much pepper can be reduced by adding a little more cream. Simmer on low heat for 10 minutes. For the omelet, chop the ham and fry it in a pan. At the same time, break the eggs into a container. Add the herbs, salt, and pepper and puree. Remove the ham from the pan, let the pan cool slightly, or use a new pan. Pour the egg mixture into the pan and fry on the lowest (!) heat. When the omelet is no longer runny, sprinkle with some cheese, if desired. Once the cheese has melted, season with oregano and serve with the tomato sauce.
