Spicy Matjes Dip

Ingredients for 4 servings:

  • 6 fish fillets (matjes double fillets)
  • 2 cl schnapps (aquavit)
  • 2 onions
  • ½ cucumber(s)
  • 100 g ham, cooked
  • 100 g quark, 20% fat
  • 100 g crème fraîche
  • 1 bunch of chives

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Rinse the herring, pat dry, and chop very finely with a cleaver. Mix with aquavit. Peel the onion and finely dice. Peel, halve, deseed, and finely dice the cucumber. Chop the ham very finely. Mix everything with the herring. Mix together the quark and crème fraîche, finely chop the chives, and add them to the herring along with the quark and crème fraîche. Season with aquavit and pepper. This tastes best with boiled potatoes.
