Salmon salad with apple and cucumber

Ingredients for 10 servings:

  • 500 g smoked salmon
  • 100 g apples
  • 100 g gherkins
  • 100 g bell pepper(s), yellow
  • 100 g cucumber(s)
  • 100 g spring onions
  • 50 g oil
  • 50 g vinegar (delicious: white balsamic vinegar)
  • ½ tbsp mustard
  • 25 g sugar
  • 25 g cucumber juice
  • Pepper, coarsely ground
  • Chives, in rolls

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cut the salmon into strips. Peel the apples, cut them into eighths, and slice them into wedges. Finely dice the gherkin. Finely slice the bell pepper, then cut the strips into chunks. Coarsely grate the cucumber. Trim the spring onions and slice them into rings. Place a tall container on a scale. Weigh in the dressing ingredients one at a time and blend thoroughly with a hand blender. Pour the dressing over the chopped ingredients, mix, and sprinkle with pepper and chives. Based on 10 servings, one serving has 161 kcal.
