Matjes cream tartar

Ingredients for 4 servings:

  • 3 herring fillets (double matjes)
  • 1 small onion(s), red
  • 4 small gherkins
  • 2 tbsp capers
  • 2 tbsp liquid (caper liquid)
  • 2 tbsp cream
  • 2 tbsp sour cream
  • 4 juniper berries
  • 1 bay leaf
  • Sea salt, coarse
  • 2 tbsp dill, coarsely chopped

Instructions

Working time approx. 15 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 15 minutes

with toasted brown bread

Rinse the herring fillets, pat dry, and cut into approximately 0.5 cm cubes. Finely dice the onion and gherkins. Add both to the herring along with the capers (chopped if using larger ones), the caper liquid, the cream, and sour cream. Finely grind the juniper berries with a finely chopped bay leaf and the salt and add. Fold in the chopped dill and season everything again with salt, pepper, and sugar. Let the salad marinate in the refrigerator for a few hours. Serve with toasted brown bread.
