Ingredients for 1 servings:
- 250 g low-fat quark (cottage cheese)
- 2 eggs or 1 egg and 1 egg white
- 100 g xylitol (sugar substitute) (Xucker light) or stevia
- 20 g protein powder, vanilla, e.g. from whey, or vanilla pudding powder
- possibly lemon juice
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Mix all ingredients together. If you like, you can also add a squeeze of lemon juice. Fill the batter into muffin tins and bake in a preheated oven at 180°C for about 30 minutes. The cheesecake muffins contain about 45 calories per serving. I got 8 muffins.
