Small almond and quark stollen

Ingredients for 1 servings:

  • 250 g butter
  • 250 g low-fat curd cheese
  • 2 eggs
  • 150 g sugar
  • 2 packets of vanilla sugar
  • 2 drops of bitter almond flavor
  • 3 tbsp rum, or a few drops of rum flavoring
  • 500 g flour
  • 1 packet of baking powder
  • 1 tsp gingerbread spice
  • 100 g ground almonds
  • 150 g candied orange peel
  • 100 g raisins
  • 100 g powdered sugar

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

for 3 Stollen, without yeast

Melt 150g and 100g butter separately, remove from heat. Beat quark, eggs, sugar, 1 sachet of vanilla sugar, and flavorings until creamy. Combine flour, baking powder, and gingerbread spice and knead in. Add almonds, candied orange peel, raisins, and the still-melted 150g butter. Knead until smooth. Preheat oven to 180°C (160°C fan oven). Divide dough into 3 portions and form 3 stollen. Place on a baking sheet lined with baking paper and brush each with a little of the melted butter. Flouring the baking sheet around the stollen will prevent them from spreading as much. Bake for approx. 30 minutes. Mix powdered sugar and the remaining vanilla sugar. Heat the remaining butter. Remove the stollen from the oven and brush with the butter. Immediately sprinkle with the sugar mixture and let cool on a wire rack. Tip: You can also vary the recipe with candied lemon peel, nuts or chocolate.
