The very best potato salad with delicatessen cucumbers

Ingredients for 4 servings:

  • 5 large jacket potatoes, waxy
  • 6 gherkins (delicatessen gherkins, alternatively regular pickled gherkins)
  • 1 onion(s), red
  • 2 tbsp olive oil
  • 3 tbsp white balsamic vinegar
  • 2 tbsp Dill, chopped
  • 2 tbsp chives, chopped
  • 1 tbsp parsley, chopped
  • 150 ml water
  • salt and pepper
  • 1 tbsp mayonnaise

Working time approx. 25 minutes; Total time approx. 25 minutes

Boil the potatoes with their skins on. Peel them, cut them into bite-sized pieces, and place them in a bowl. Thinly slice the gherkins. Peel and finely chop the onion. Add both to the potatoes in the bowl. Carefully stir in 1 tablespoon of mayonnaise. Mix the water with olive oil, balsamic vinegar, salt, and pepper to make a marinade (if it’s too acidic, add 1 teaspoon of sugar). Pour this marinade over the potatoes. Sprinkle with dill, parsley, and chives and stir well. Let stand for about 20 minutes before serving.
