Potato and radish salad

Ingredients for 4 servings:

  • 600 g potato(s), waxy
  • 150 ml vegetable stock
  • 1 bunch radishes, sliced
  • 1 onion(s), diced
  • 1 bunch of chives, cut into rolls
  • 4 tbsp vinegar
  • 2 tbsp germ oil (wheat germ oil)
  • 1 pinch(s) of sugar
  • e.g. salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

also suitable for vegans

Boil potatoes in their skins for 20 minutes. Peel and slice the potatoes. Pour the broth over them. Mix the vinegar, wheat germ oil, sugar, salt, and pepper to make a salad dressing. Stir in the radishes and chives. Gently mix the potatoes and salad dressing.
