Millet-oat semolina porridge

Ingredients for 3 servings:

  • 600 ml almond milk (almond drink), unsweetened
  • 300 ml coconut milk
  • 3 tbsp, heaped xylitol (sugar substitute)
  • ½ tsp cinnamon
  • some vanilla, ground
  • 130 g millet semolina
  • 1 tbsp, heaped oat bran
  • some butter or margarine (vegan)
  • some lemon zest
  • 1 tbsp coconut blossom syrup or other syrup
  • e.g. applesauce

Instructions

Working time approx. 2 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 7 minutes

also vegan, sugar- and gluten-free, without soy

Bring the milk to a boil, whisking continuously. Add the sugar, cinnamon, and vanilla, and stir in the semolina and oat bran. Simmer gently, stirring constantly, until the mixture thickens slightly. Add a knob of butter, the lemon zest, and the syrup, stir thoroughly again, and serve. Delicious on its own or with applesauce, hot or cold.
