Ingredients for 4 servings:
- 3 eggs
- 4 tbsp sugar
- 1 tbsp vanilla sugar
- 1 tsp lemon zest, grated
- 400 g double cream cheese
- 1 pinch of salt
- 250 g strawberries, fresh or frozen
- 2 tbsp powdered sugar
- 200 g cream, 10%

Absolutely delicious, everyone loves it.
Separate the eggs. Whisk the egg yolks, sugar, and vanilla sugar until creamy. Add the lemon zest and mix everything with the cream cheese. Preheat the oven to 200°C. Beat the egg whites with the salt until stiff peaks form and fold into the cream cheese mixture. Grease a soufflé dish and pour in the cream cheese mixture. Bake the soufflé for approximately 20-30 minutes. Meanwhile, hull and wash the strawberries, then quarter or eighth them, depending on their size. Mix with the powdered sugar and chill. Whip the cream until stiff peaks form and mix in. Serve the soufflé with the strawberry cream.
