Quark casserole with fruit

Ingredients for 5 servings:

  • 5 eggs
  • 120 g coconut blossom sugar
  • 1 packet of vanilla sugar
  • 80 g almond flour
  • 1 dashes lemon juice
  • 500 g quark or skyr
  • 250 g berries, preferably strawberries and blueberries
  • 1 pinch of salt

Instructions

Working time approx. 20 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

Suitable for keto

Preheat the oven to 175°C (top/bottom heat). Separate the eggs and beat the egg whites in a bowl with salt until stiff. Beat the egg yolks in a bowl with coconut blossom sugar and vanilla sugar until creamy. Add the almond flour, quark/skyr and lemon juice and mix all ingredients well. Now fold the ice cream into the quark mixture in portions. Stir half of the berries into the mixture so that they are evenly distributed. Grease a baking pan with butter and spread the mixture in it. Spread the other half of the berries on top. Bake on the middle rack for approx. 35-45 minutes. Serve either lukewarm or cold. Per portion approx. 380 kcal.
