Banana and pineapple gratin

Ingredients for 4 servings:

  • 1 can pineapple
  • 2 bananas
  • 1 tbsp lemon juice
  • 2 tbsp butter
  • 4 tbsp sugar
  • 100 g wafer rolls, e.g. Cigarettes Russes
  • 200 ml coconut milk
  • Fat, for the shape

Instructions

Working time approx. 25 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour

Fruity dessert

Grease a small baking dish. Drain the pineapple and cut into pieces. Slice the bananas and drizzle with lemon juice. Heat the butter in a pan and fry the pineapple for 2 minutes. Add the bananas and fry for another 1 minute. Sprinkle with 2 tablespoons of sugar and let it caramelize. Pour the fruit into the baking dish. Preheat the oven to 200°C (175°C fan-assisted). Arrange the pastry rolls on top of the fruit and pour the milk over them. Sprinkle with the remaining sugar. Place in the oven and bake for about 15-20 minutes, until the sugar begins to caramelize. Let cool slightly and serve with some vanilla sauce, if desired.
