Ingredients for 2 servings:

  • 1 m.-large zucchini
  • ½ mango(s), ripe, juicy
  • 1 tbsp soy sauce, Japanese
  • Salt
  • Pepper, white

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Fresh, quickly prepared side dish for pan-fried, grilled or buffet dishes

Wash the fresh, firm zucchini and finely grate it. Peel and quarter the mango. Cut one quarter into very fine strips. Squeeze the juice from the remaining quarters. Mix the soy sauce with the mango juice and season with salt and pepper. The salad doesn’t need to marinate much; it can be served immediately. The zucchini will quickly absorb the fruity, tangy flavor of the dressing.
