Potato stew with ham

Ingredients for 4 servings:

  • 100 g carrot(s)
  • 50 g celery
  • 1 onion(s)
  • 1 stalk(s) leek
  • 800 g potatoes
  • 2 tbsp butter
  • 700 ml instant meat broth
  • Salt
  • pepper
  • nutmeg
  • 150 g ham, cooked, sliced
  • 2 tbsp parsley, chopped

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Wash, peel, and chop the carrots and celery. Peel and finely chop the onion. Trim, wash, and slice the leek. Peel, wash, and dice the potatoes. Heat the butter in a large pot and sauté the prepared vegetables. Pour in the broth and season with salt, pepper, and nutmeg. Cover and simmer for about 15 minutes, until the potatoes and carrots are tender. Cut the ham into strips. Take 3 ladles of the stew. Roughly puree the rest. Return the vegetables and ham to the pot and bring back to a boil. Serve sprinkled with parsley.
