Ingredients for 12 servings:

  • 75 g sheep’s cheese
  • 75 g cream cheese
  • 250 g flour
  • 1 tbsp sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ tsp thyme, dried
  • 1 tbsp parsley, finely chopped
  • 1 tbsp chives, in rolls
  • 300 g yogurt
  • 50 g butter, melted or oil
  • 1 egg(s)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Preheat the oven to 200°C (180°C fan-assisted oven). Mash the feta cheese and cream cheese with a fork and mix until creamy. In a large bowl, combine the flour, sugar, baking powder, salt, thyme, parsley, and chives. In a second bowl, combine the yogurt, butter, and egg, then add the mixture to the dry ingredients. Stir until just combined. Grease a muffin tin or line with paper baking cups. Fill each cup with about 2/3 of the batter. Add a heaped spoonful of the cheese mixture to each cup. Then top with the remaining batter. Place the tin in the hot oven and bake for about 20 minutes, until the tops of the muffins crack. Remove the tin from the oven and let the muffins rest for 5 minutes.
