Mushroom gratin

Ingredients for 4 servings:

  • 2 eggs
  • 1 tsp salt
  • ½ tsp pepper, possibly white
  • 100 g spring onion(s) or leek
  • 150 g cooked ham
  • 1 garlic clove(s)
  • 2 tbsp butter for butter flakes
  • 500 g mushrooms, fresh
  • 2 tbsp parsley, chopped
  • Butter for the mold

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Whisk the eggs with salt and pepper. Peel the onions or leeks and slice them into thin rings. Cut the ham into thin strips. Peel the garlic and rub it into a casserole or gratin dish, then grease with a little butter. Peel the mushrooms, rub them, and wash them only if necessary. Then dry them thoroughly with a cloth. Slice the mushrooms and layer them in the dish with the leeks or spring onions and ham. Pour the egg wash over them and top with knobs of butter. Bake the gratin on the middle rack at 200°C for about 45 minutes. Sprinkle with chopped parsley.
