Ingredients for 2 servings:

  • 250 g flour
  • 15 g yeast, fresh or 1/2 pack dry yeast
  • ⅛ liter milk
  • 1 egg(s)
  • 2 tbsp sugar
  • 1 packet of vanilla sugar
  • 40 g butter or margarine
  • 1 pinch of salt
  • ½ lemon(s), grated peel, untreated

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Place the flour in a bowl and make a well in the flour. Mix the crumbled yeast with the lukewarm milk (mix the dried yeast into the flour without stirring), pour it into the well, and knead it with the egg, sugar, vanilla sugar, melted fat, salt, and lemon zest until you have a smooth dough. Cover the dough and let it rise in a warm place for 1 hour. Then knead the dough well, shape it into dumplings, and let it rise again on a baking sheet lined with aluminum foil until the surface is smooth. Bring a wide pan of water to a boil, add the dumplings, and cook for 10 minutes, turning once. Tear the dumplings open immediately after removing them from the pan to prevent them from collapsing. TIP: Serve yeast dumplings with either compote or browned butter.
