fluffy yeast dumplings, easily prepared in a steamer

Sift the flour into a bowl and sprinkle on the yeast. Add the melted butter and warm milk, along with the eggs, sugar, and salt, and knead everything together. Knead by hand until the dough easily pulls away from your hand and the bowl. It shouldn’t be too moist. Cover the bowl with a cloth and let the dough rise in a warm place for 60 minutes. Then shape the dough into tennis ball-sized balls and let them rise for another 30 minutes in a warm, draft-free place. I removed the insert and the plastic attachment from the steamer and placed 6 dumplings in each to rise. I use a Vitalis steamer from WMF. Pour about 0.5 liters of water into the bottom of the Vitalis, heat it up, and put the lid on. When the thermometer reads 90°C, place the insert in the bottom, place the attachment on top, and cover. After about 15 minutes, your fluffy dumplings are ready. Serve with compote of your choice, apple sauce, vanilla sauce or even canned apricots.
