Fried potatoes with peppers

Ingredients for 4 servings:

  • 800 g jacket potatoes from the previous day
  • 4 spring onions
  • 2 bell peppers, red
  • 2 tbsp oil
  • salt and pepper
  • 1 tsp paprika powder

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Peel the potatoes and dice them. Trim and wash the spring onions, finely dice the white part, and cut the green part into rings. Halve the bell peppers, remove the seeds, wash, trim, and very finely dice them. Heat 1 tablespoon of oil in a large non-stick pan. Fry the white spring onions, add the bell pepper pieces, and cook for 2 minutes. Remove the vegetables from the pan and keep warm. Heat another tablespoon of oil and fry the potatoes over high heat for 2-3 minutes, then fry over medium heat for 10 minutes until crispy. Season the potatoes with salt, pepper, and paprika, add the onion and bell pepper mixture, and toss everything briefly. Serve sprinkled with the green onion rings.
